Rainbow toast
A fun fruity and healthy rainbow toast spread with cream cheese, drizzled with dearest and so topped with fruits in all the colors of the rainbow!
My kids were feeling left out of the toast craze so I made them a super fun, super colorful rainbow toast!
See, we don't usually keep avocados around. My husband is allergic and neither kid has always actually taken to them. (I volition proceed trying, don't worry y'all avocado lovers who are recoiling in horror.) And so the avocado-blazon toast options weren't really working for us.
And of course they like toast. Usually with their cheesy eggs every Saturday morning. And sometimes with peanut butter for an afternoon snack. Anything with peanut butter.
But I wanted to give them a little something more in the way of toasty fun.
Then I went with ALL the fruits!
They were and so excited when they saw this rainbow toast. Thou was like, "WOW Mommy!" Immediately followed past, "Can I have the whole affair?" She's like her mama, doesn't much intendance for sharing food 😉

The whole wheat bread is toasted, spread with cream cheese and drizzled with honey. Then I used strawberries, standard mandarin oranges, banana, green grapes, blueberries and pomegranate seeds for the fruits.
You could definitely adjust and sub some of these out — kiwi for the greenish grapes, blood-red grapes for the pomegranate, blackberries for the blueberries, fifty-fifty pineapple for the banana.
We don't always have all the colors of fruit, but we're usually pretty close. These kids, human, they are fiddling fruit monsters. #atleastitshealthy
And they are happy to be in on the toast tendency fun.
Swallow the rainbow (the real food kind) – and savor!

Ingredients
- four pieces whole wheat breadstuff, toasted
- 1/3 cup plain foam cheese, divided
- 4 teaspoons dearest, divided
- 4 big strawberries, thinly sliced
- 1 mandarin orange, divided into segments
- one medium assistant, sliced
- 12-15 green grapes, halved if desired
- 1/3 cup blueberries
- 1/4 cup pomegranate seeds
Instructions
- Spread the cream cheese evenly over each slice of toast and drizzle with i teaspoon honey per piece.
- Spread the fruit in a rainbow array: red, orangish, yellow, green, blueish, purple.
- Serve and savor!

You tin bandy out some of the fruits if you prefer: kiwi for the dark-green grapes, red grapes for the pomegranate seeds, blackberries for the blueberries, even pineapple for the banana. Make it your own!
